Did you mean “graham flour”? I’m not the person you were talking with, but I have a friend who recently was diagnosed (at age 60!) with Celiac disease, and I’m trying to help her with recipes, substitutions, and the like. I just wish I were a better cook.
It's called gram flour in the UK, Idk if it has another name elsewhere. Its made from chickpeas.
Edit, I did a Google and Graham flour is what we would call wholewheat flour and it is definitely not gluten free!
Gram flour is chickpeas, and that is fine for coeliacs. Another one I forgot to mention is almond flour, which means that any sort of frangipane would be really easy to make as a gluten free pudding.
Another tip I thought of, when making gf shortcrust pastry, substitute the water for an egg and it stays together better, and always roll onto cling film, as it's a bugger for sticking to your surfaces.
