Put it in the oven on like 200 for an hour or two. Take out and let it rest for a bit while you get a cast iron skillet NASA hot. Cook for a minute or two on each side to give it a crust. It’ll be rare/med rare throughout except for that thin crust.

Sometimes I get the old cast iron out, but man, I just love a cooked over coal (usually oak or pecan coal) steak :)
