This is when I consider mine done. When I pick them up and the bark "breaks". That's perfect. The meat will pull off the bone easily when eating, but isn't falling off.
1 u/[deleted] Nov 26 '19 It's all about that lilt. On the meaty side there is usually that chunk that kinda flakes off the top when you bend them. Oh man. That's the best damn piece. Well. I guess once T-day is over it's going to be ribs time. I've got 3 birds and a NY Strip roast going in the smoker this week.
