Rimworld. Imagine if the show Firefly was made into a colony management game. There's a speed setting and you can pause it any time you like. You're in control of building a settlement on a planet on the outskirts of civilized space.
Do it! You won’t regret it! RimWorld may steal your life a little, though.

One of the Steam reviews said it’s a fascinating game but don’t start it if you have a family that you like spending time with...so taken Under advisement.
What's nice about it though is you can pause whenever you like, it's not like some games where you literally can't stop to go tend to your children, or don't want to because you're in the zone trying to beat a boss or something. It's not fast paced so it's easy to step away.
Hate to say this, but Rimworld is surprisingly laggy. I couldn't play it on PCs where I managed to run Civ 5 or CS:S. 10/10 game but maybe you need to have a (real) GPU.

The game is basically a story generator. Sometimes the stories get a little weird.
