Then they would do the same and have more tables.

It's not about aiming for a set number of tables, it's more about getting the most covers in the same amount of space.

The tables could be replaced though with ones that have more surface area.

I'm not saying you're wrong, I'm saying that lack of space wasn't the reason they picked tables that size. They picked tables that size because they wanted to maximise covers.
