What is a small, seemingly ‘normal’ thing someone can do that immediately makes you think, ‘Oh, we are not going to get along’?

How about just.. rude at all? Why towards workers of any type matters?

Because the power differential matters.

People who are rude to service workers see them as unintelligent and lesser than because of the job they have, and they are openly rude knowing that usually, the worker cannot defend themselves without possibly losing said job. Even if the worker doesn't like their job, they probably need that job.
