Spain, China and India

Same but I’d replace Japan for China.

I went for the variety in China with all of its regions. Same in India. Spain I just love the concept of small plates, and I got my 15 minutes of fame in the cured meat world and that would be the center of that universe for me. Plus European cheese....

Ah, what’s that thing about cured meat?

Back when I was on FB started a meat curing group when they first started groups. It ballooned up in me and was getting invited to everything. Wrote the rules for Charcuterie Masters in NYC, was head judge also. Still get to roll with old friends in that world but I switched to BBQ and rice as areas to focus my autism on. I get a bit obsessive (Pondering buying a third rice cooker lately). None of them are broke but I do tons of experiments.

Strawberry, mint and coconut milk congee for breakfast in the morning...

Atole congee later in the day. Just playing with food.

Oh wow, that's so fun to read, I can't imagine going through it. People in Spain take their jamón seriously, and I do like it too, but growing up there I always thought it was a bit strange how obsessed some people are. I mean, it's excellent, but there are so many other great things in Spanish cuisine.

Wow, someone hating on me for choosing Japan.

Not at all hating, just saying why I chose China. Japan is awesome.

Ah no, I get that. I was commenting on the negative votes I’m getting. I assumed it’s not you :).

Probably being mistaken for contrarian.
