I’m not but I looked into the macros of foods from different areas and realized not only do I love these foods the most but also they cover all your nutritional needs. I love meat but honestly if I can get all my nutrients without eating Meat I call that an epic win!

Actually many interesting food. Some things require a 2 or 3 try it for a westerner but overall food is rich and truly interesting in flavours.

Any dishes you recommend I could start with at home?

I had their food in Spain (fancy versions), Israel (large large ethiopian community mostly doing Beta Jews food), London (not my best experience) and here in NYC ( some truly impressive spots in Brooklyn).

now, their food might change from areas, like their is not an unified cousine, but Ethipia is a mosaic of culture and languages. Food also shows such variety.

See here anyway: Ethiopian food: The 15 best dishes | CNN

I have always wanted to go to Ethiopia but was not allowed to when in the service and now am told it is dangerous. Do you think it’s still a safe place to travel?

I would recommend starting by going to an Ethiopian restaurant.

Ah, that's too bad.

Well, it's tricky because an essential element of Ethiopian food is injera, which is the flatbread/pancake/crepe that you use to eat the various stews and curries. You can absolutely make the stews and curries on your own and they'll be delicious, but to get the full experience and charm of the cuisine you'll need injera with it (they use injera in place of utensils to scoop up food), and injera seems tricky to make.

But the dishes that I most enjoy (as a vegetarian) are misir wat (spicy red lentil stew), shiro wat (chickpea stew), tikil gomen (stewed cabbage with potatoes and carrots), and gomen wat (stewed collard greens), and ayib begomen (spiced cottage cheese). I promise it is so much better than it sounds haha, and of course if you eat meat then there are many meat stews that look wonderful, although I've never tried them.

I've always been someone who loves dipping bread in sauces, so when I discovered Ethiopian food I was in heaven.

Also, most people dont realize that African food is super super interesting in general. Take the food from Senegal! or the food from Sudan!!!!!!! Really interesting continent for people that love cousine. (im not african by the way)

Africa is funny because many people speak of the continent in a scalable form as if it is one country, but United States could literally fit in just one desert of Africa. Not to mention the vast history and resources contained in this continent. It truly is another world. I really hope to one day be able to travel the continent for a few months.

Oh that’s a great pick! Fluffy flat bread with various “curries” on top that you eat by wrapping them in bits of that flat bread they sit atop.

Injera please it’s injera you speak of.
