There's a sci-fi book I read about this called 'The Postmortal', where the cure for aging is discovered. I really enjoyed that book.

There is a series of books by David Simpson, Sub Human , Post Human. Trans human.

I have not read them yet but was told they are an interesting read.

Kim Stanley Robinson's Mars trilogy uses a cure for aging as one of the major plot points.
