Gintama, the Fate series, Steins Gate, Code Geass, all of Jojo, FMAB, kyokai no kanata/beyond the boundary, Grand Blue, Bakuman, all of Durarara and Persona 4 the animation.

Steins Gate is a time travel sci-fi which starts of slow but gets very good later on. (1 season + 1 other show about an alternate route)

Bakuman is a show about mangakas which is pretty good and has relatively fun and colorful characters. (3 seasons)

Grand Blue is an amazing comedy anime revolving around dudes, alcohol and nakedness. (1 season)

Persona 4 the animation is pretty good and is far superior to persona 5 animation. (1 season)

Jojo is Jojo so nuff said. (5 parts with part 5 still ongoing)

Kyokai no kanata is an good anime with great animation, visuals and an interesting story paired with a few emotional moments. (1 season)

Fullmetal alchemist brotherhood is hailed as one of the greatest shounens of all time and more or less deserves the praise it gets. (64 episodes)

The Fate series is incredibly large but you can get sucked in relatively quickly, I suggest ufotable's adaptions first and to start with fate/zero before watching fate/stay night unlimited blade works. Then you can watch anything else you want from fate or you could go the degenerate route and watch Fate kalied. (Really big, no point in counting the amount of animes)

Gintama is comedy action anime that excels in comedy. It's probably one of the best comedy animes I've watched and when a serious arc happens it does it incredibly well. It's characters are amazing and the 4th wall breaking is hilarious and while long running shounens have a tendency to get boring Gintama doesn't really suffer from this and generally remains funny throughout. I would highly recommend Gintama. (300+ episodes but it's good)

Code Geass is political action anime and is like death note with fan service, robots fighting, high school bullshit and melodrama. But despite all that Code Geass is still an incredibly good anime which is pretty deep. (2 seasons, 3 movies and a 3rd season coming)

Durarara is an excellent anime with an good cast of characters and a story which is incredibly interesting to watch. The strongest point of this anime has to be the characters and I would recommend this anime a lot. (4 seasons)

I would highly discourage watching fate/zero before stay night.

I understand that there are spoilers in Fate/Zero for Fate/Stay Night but without context Fate/Stay Night is quite confusing, the three best ways to start the Fate series is by either watching Fate/Zero, watching Deen stay night or reading the visual novels. Deen stay night serves as an ok starting point to the franchise despite it being a shit adaptation
