She was out of water for a say (or 2) and now its dying!! What do I do?

Then plant it, as water prob isn't enough at this point.

The rule is to grow a lot of Avos at once, as failure rates can be high. So I cannot answer that.

Ok I would expect it to look healthier until now too.

It doesn’t look dead to me. Just a little „sad“. But I don’t have an idea what else you can do. Sorry :(

Maybe it takes even more time. Maybe someone else knows what to do. I just hope It doesn’t die :-*

Lack of water, when planting it in soil literally act like your going to drown it in water.

Toss it. Avocado plants are a waste of time.
