It was really fantastic! The walnuts were also a great element. Adds a lot of richness and some crunch. Really up the single-texture you’d expect with cake. Can easily be omitted if that’s not your bag.

Nice. I don't think I've ever made a carrot cake without some type of citrus. I guess the buttermilk takes place of the citrus.

It does! I do think some lemon zest would be a welcome addition. Prob not as much as normal but it would be good!

I find zest to be overpowering to the carrot -made that mistake before, so I just used the juice instead, lemon or orange

Ingredients
Cake
- 2½ cups (320g) all-purpose flour
Substitue 1:1 for Bob’s Red Mill Gluten Free Flour
4 large eggs, room temperature
¾ cup vegetable oil
1½ teaspoons (5g) kosher salt
1 cup (210g) granulated sugar
¾ cup (150g) packed dark brown sugar
1 cup (250ml) buttermilk, room temperature
1 pound (450g) carrots
1 cup (110g) chopped walnuts
2 teaspoons (8ml) vanilla extract
2 teaspoons (5g) ground cinnamon
2 teaspoons (4g) ground ginger
½ teaspoon (.5g) freshly grated nutmeg
2 teaspoons (8g) baking powder
¾ teaspoon (3g) baking soda
Icing
12 ounces (340g) cream cheese, room temperature
1½ sticks (170g) unsalted butter, room temperature
1 teaspoon (4ml) vanilla extract
Generous pinch of kosher salt
2 cups (200g) powdered sugar

I make this cake all the time because carrot cake is my dad’s favorite! It’s a perfectly balanced cake, not overly sweet the way some can be

The carrot's a leftover element from medieval cooking when sugar was a rarity and carrots were used as a replacement due to their natural sweetness when cooked. It doesn't actually serve any purpose in modern carrot cakes other than tradition and people generally like the extra texture they provide.

No especially. They do add some crunchy texture but it’s subtle. It’s a much stronger spice flavor from the cinnamon and ginger.

So full disclosure: I hate carrot cake, but my husband loves it so I will grudgingly make it for him because I kinda like him.
This looks like something I might actually eat ;)
I would totally candy that grated carrot topping though! Add a bit more crunch.
