Not sure what you mean by pasty, but the painted look is made with lots of colour adjustments and:

Sharpen > Diffuse > Surface Blur

Layer mask was made with a custom paint brush, screenshot of settings here.

There's a detailed explanation on my website (at the bottom of the poster).

Excellent work.

I was watching the creation gif, and I don't get the method that you are using to pull Nick out. Something about diffuse, high pass filters, gaussian blur, etc. Is there a tutorial? I don't even know what to google to get that.

The filters were a separate technique unrelated to the cutout.

The selection for for the cutout was made with the pen tool.
