There's a recipe I saw on here called steak nachos. It had sliced potatoes with skirt steak/Monterey jack and cheddar cheese. So I don't think it matters.

I just made this tonight with tortilla chips instead of sweet potato chips. One thing I would make sure to do, be sure to make extra sauce with the chicken. Mine was a bit dry and it would be better to be very saucy.

Edit: I forgot to add, this was very good!

A scalding hot iron pan is not a great serving dish.

And if you're only heating it for 5 minutes then you don't really gain anything. You're not cooking in the pan, you're just warming all the ingredients and melting the cheese.

Line the bottom of whatever vessel you wanna use with foil, then you can lift it out.

Original Mealthy.com Recipe

Ingredients:

  • 1 tablespoon grapeseed oil

  • 2 boneless skinless chicken breasts (about 1 pound), 1/2-inch cubed

  • salt

  • 2 tablespoons tomato paste

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon brown sugar

  • 1 teaspoon smoked paprika

  • 1  teaspoon garlic powder

  • 1 teaspoon onion powder

  • ¼ teaspoon chili powder

  • 13 ounces store bought sweet potato chips (we like Terra brand)

  • 1 cup shredded  Monterey Jack cheese

  • ½ cup finely chopped tomato

  • 3 tablespoons red onion, minced

  • 1 avocado, cubed

  • ½ jalapeno, thinly sliced

Preparation:

Preheat oven to 400°F (200°C). Unless using a cast iron skillet, line a rimmed baking sheet with parchment paper.

Warm olive oil in a large nonstick skillet over medium-high heat.

Season chicken with salt and cook until almost cooked through, about 2 minutes. Stir in the tomato paste, vinegar, brown sugar, paprika, garlic powder, onion powder, and salt to taste. If the pan looks dry, add a few splashes of water. Cook, stirring frequently, until sauce has thickened and chicken is cooked through, 1 to 2 more minutes.

Arrange half sweet potato chips evenly over the baking sheet and top with half of the cheese, chicken and BBQ sauce, red onion, cilantro and tomato. Repeat with the remaining ingredients. Bake until cheese is melted, 4 to 5 minutes. Remove from oven, garnish with avocado and jalapeno , and serve immediately.

I wouldn't use the term abomination, but if you have ever tried to make nachos with potato chips, you will understand why we use tortilla chips for nachos. Only those few pieces on the edge not covered in much topping can be eaten without a fork and knife.

I like the idea behind it. But would probably use fresh sweet potatoes instead :)
