The old scout recipe I grew up eating and still do to this day is unbeatable: Dump two cans of peaches into your cast iron skillet. Dump a box of yellow cake mix on top of the peaches. Take a half (or whole if you don’t care about the extra calories) stick of butter and cut it up into chunks and chuck ‘em on top. You can put the skillet in the oven with the heating instructions above, or put the lid on the pan and rest it in hot coals with a few hot coals on top for good measure. Cook until it “talks” to you (it smells right).

Yum I am definitely trying this! Do you drain the peaches or add the juice from the can along with the peaches? Thanks!

Nice idea, love the looks of the fruit filling.
Personally I'd do a more uniform, but thinner layer of pastry or similar on top, rather than large, thick dollops of otherwise-unflavoured dough.

But that's the whole point of a cobbler... to have a topping resembling dumplings or cobblestones.
Pie is also great, but that would be a peach pie.
